When the sharpener is set up, the "V" configuration of the ceramic rods establishes the correct angle for most knife sharpening. You supply the manpower with a simple slicing motion down and across the ceramic rod and the angle does the rest. Ideal for use in restaurants, home kitchens, packing houses and more. In addition to most standard knives, it will also sharpen wedge, concave, or hollow ground knife blades. Also excellent for re-sharpening scalloped edged knives. Full instructions are included with each sharpener. Includes spring loaded storage in the fine oak base and comes with two coarse and two fine grit sharpening rods which are 9" long and 5/16" in diameter. The sharpening angles are pre-fixed at 15 degrees for sharpening on the coarse rods and 22 degrees for finishing on the fine rods so anyone can achieve a perfectly sharpened knife with the Idahone CS-4.
